Banana Almond and Chips Muffins
2 cups AP flour
8 bananas
1 cup ground almond
1/4 cup butter - melted
1 cup sugar
4 eggs
1/2 cup raisins
1 cup mini choc chips
1 tsp biocarbonate soda
1 tsp salt
1 tsp vanilla essence
1/4 cup buttermilk
Method
Preheat oven to 180'C. In a bowl, sift AP flour and add in biocarbonate soda and ground almond. In another bowl, mashed bananas and add in melted butter. In another bowl, whisk eggs and sugar and pour in buttermilk. Combine egg mixture into mashed bananas. Fold in flour mixture. Add in raisins, mini choc chips and salt last. Bake for 25 minutes
