Asam Pedas Ayam

Asam Pedas Ayam.
Ingredients (Bahan-bahan)
1. 1 whole chicken, cut into 8-10 portions (1 ekor ayam, dipotong 8-10
bhg.)
2. 15 dried chillies, deseeded, boiled and rinsed (15 tangkai cili
kering, buang biji, rebus dan bilas)
3. 5 fresh red chillies (5 biji cili merah)
4. 1 onion, diced or sliced (1 labu bawang besar, dimayang/potong dadu)
5. 7 shallots, cut in 2s (7 ulas bawang merah, potong dua)
6. 5 garlic, slightly bang with knife (5 ulas bawang putih, ketuk
dengan pisau besar)
7. 1 inch of galangal, skinned and cut into smaller bits (1 inc
lengkuas, potong kecil)
8. 2-3 lemon grass, discard leaves and leafy parts, cut into smaller
pieces (2-3 batang serai, potong kecil, buangkan bhg. berdaun)
9. ½ inch of fresh turmeric root, skinned and cut into smaller bits.
Alternatively you may use 1 tbsp of dried turmeric powder (½ inci kunyit
hidup, kikis dan potong kecil ataupun guna 1 sudu the kunyit serbuk)
10. Half cup of soft tamarind, mixed with 1 litre of water, discard any
seeds. Use less or more water depending on the desired thickness. (Setengah
cawan asam jawa, yang lembut, campur 1 liter air, buang biji. Kurang kan air
jika suka kuah yang pekat dan lebih masam)
11. 1 ladle of cooking oil (1 senduk nasi minyak masak)
12. 2-3 level tbsp sugar (2-3 sudu makan gula)
13. 2 tsp salt (2 sudu teh garam)
14. 1 sq inch of Malacca prawn paste (1 inci persegi belacan Melaka)
15. 1 bunch of kesum leaves, jika suka (1 cekak daun kesum, optional)
Method (Cara)
1. Clean the chicken and soak in tamarind juice, prepared earlier
(Bersihkan kepingan ayam dan rendam dalam air asam jawa)
2. Rinse and drain cooked dried chillies, place in food blender, add in
fresh chillies, shallots, garlic, galangal, lemon grass, turmeric, prawn
paste and ¼ cup of tamarind juice, from the one used to soak the chicken.
(Masukkan cili kering, cili merah, bawang merah, bawang putih, lengkuas,
serai, kunyit, belacan dan suku cawan air asam jawa dari rendaman ayam tadi,
ke dalam pengisar, kisar halus).
3. Heat oil in a pot/deep pan (Pijarkan minyak dalam kuali atau periuk)
4. Fry the onion until fragrant (Tumis bawang besar sehingga wangi)
5. Add in the blended chilli paste and decrease the heat. Fry until
mixture becomes oily. Stir always. (Masukkan bahan kisar dan goreng hingga
garing, kacau selalu)
6. Add in salt (Masukkan garam)
7. Add in chicken and the tamarind juice. Still with the low heat,
cover the pot and cooked until boiling and chicken is tender. Stir gently.
(Masukkan ayam dan air asam jawa, perlahankan api dan masak hingga ayam
empuk)
8. Add in kesum leaves and sugar. Boil further, stirring occassionally
(Masukkan daun kesum dan gula, Teruskan masak hingga mendidih, kacau
sesekali)
9. Adjust the taste. Reduce heat and continue simmering for 5 minutes.
Remove from heat. (Sesuaikan rasanya, tambah gula, garam jika perlu,
renihkan selama 5 minit. Tutup api).
10. Ready to be served with rice.(Sedia untuk disajikan dengan nasi).
Note: Asam pedas ayam sedap dimakan sekali dengan lauk ikan sepat goreng.
